Healthy Zucchini Bread
Ingredients:
- 1/3 cup melted coconut oil
- 1/2 cup pure maple syrup
- 2 eggs
- 1/2 cup almond milk
- 1 tsp baking soda
- 1 tsp ground cinnamon + more to sprinkle on top
- 2 tsp vanilla extract
- 1/2 tsp sea salt
- 1/4 tsp ground nutmeg
- 2 cups grated zucchini
- 1 3/4 cups whole wheat flour
Directions:
- Preheat oven to 325 F. Grease a 9″x5″ loaf pan.
- In a large mixing bowl, combine the coconut oil and pure maple syrup. Beat with a whisk until well combined. Add the eggs and beat well.
- Add the milk, baking soda, cinnamon, vanilla, salt, and nutmeg; whisk to blend.
- Use a spoon to stir in the zucchini. Add the flour and stir until just combined.
- Pour batter into greased loaf pan and sprinkle lightly with additional cinnamon.
- Bake for 55 to 60 minutes, or until a toothpick comes out clean when placed in the center.
- Let cool on wire rack before removing from pan.
