Ingredients

  • 1 cup sweet baby carrots.
  • 1 cup green beans, cut in half
  • 1 cup sugar snap peas
  • 1 tbsp extra-virgin olive oil
  • 1/8 cup hummus
  • 1 tsp lemon juice
  • 1 tsp water

Directions

  1. Heat olive oil on medium heat in skillet.
  2. Add veggies and sauté until tender but crisp.
  3. Meanwhile, mix hummus, lemon juice and water together in a small bowl.
  4. Drizzle hummus dressing over veggies.
