Sautéed Veg with Hummus Dressing
Ingredients
- 1 cup sweet baby carrots.
- 1 cup green beans, cut in half
- 1 cup sugar snap peas
- 1 tbsp extra-virgin olive oil
- 1/8 cup hummus
- 1 tsp lemon juice
- 1 tsp water
Directions
- Heat olive oil on medium heat in skillet.
- Add veggies and sauté until tender but crisp.
- Meanwhile, mix hummus, lemon juice and water together in a small bowl.
- Drizzle hummus dressing over veggies.
