Ingredients

  • 1 head cauliflower, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tomato, diced
  • 1 medium onion, diced
  • 1 cup grated cheddar cheese
  • Olive oil spray
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp chili powder
  • 2 tsp paprika
  • 2 tsp oregano
  • Salt and pepper, to taste
  • Green onion for garnish

Directions

  1. Preheat oven to 400° F.
  2. Place diced cauliflower, peppers, and onion on baking tray lined with parchment paper.
  3. Spray lightly with olive oil.
  4. Season with garlic powder, onion powder, chili powder, paprika, oregano, salt, and pepper; toss to coat veggies.
  5. Bake in oven for 18 to 20 minutes, until veggies are tender.
  6. Top with cheese and place back into the oven for 3 to 5 minutes, until cheese is melted.
  7. Garnish with green onion and diced tomato.
