Protein Banana Bread Muffins

Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1/2 cup vegan vanilla protein
  • 1 tap baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 3/4 cup coconut sugar
  • 1/2 cup coconut oil, melted
  • 5 medium bananas, mashed
  • 1 tbsp cinnamon

Directions:

  • Preheat oven to 350 F and spray muffin pan.
  • Combine flour, protein powder, baking soda, cinnamon, and salt. Set aside.
  • In a separate large bowl, combine coconut oil and coconut sugar.
  • Stir in eggs, then stir in banana.
  • Add flour mixture to banana mixture and stir well to mix.
  • Spoon evenly into muffin pan.
  • Bake 30-35 minutes.
