Peppermint Bars
Ingredients:
- 1/2 cup raw cashews
- 1 tbsp unsweetened almond milk
- 1 1/2 tsp peppermint extract
- 1/2 tsp pure vanilla extract
- 3 tbsp pure maple syrup
- 1 cup vegan semi-sweet chocolate chips
- 1 tbsp coconut oil
Directions:
- Soak cashews overnight or in boiling water for 1 hour. They should be soft and plump. Drain.
- Add cashews, milk, peppermint extract, vanilla, and maple syrup to food processor or blender. Blend until smooth.
- Add a thing layer to silicone bar or round mold. Freeze 10 minutes.
- Add a second thin layer on top. Freeze 1 hour.
- Melt chocolate chips and coconut oil in microwave.
- Dip bars to coat in chocolate. Place on baking sheet lined with parchment and freeze 2 hours to set.
