Peppermint Bars

Ingredients:

  • 1/2 cup raw cashews
  • 1 tbsp unsweetened almond milk
  • 1 1/2 tsp peppermint extract
  • 1/2 tsp pure vanilla extract
  • 3 tbsp pure maple syrup
  • 1 cup vegan semi-sweet chocolate chips
  • 1 tbsp coconut oil

Directions:

  • Soak cashews overnight or in boiling water for 1 hour. They should be soft and plump. Drain.
  • Add cashews, milk, peppermint extract, vanilla, and maple syrup to food processor or blender. Blend until smooth.
  • Add a thing layer to silicone bar or round mold. Freeze 10 minutes.
  • Add a second thin layer on top. Freeze 1 hour.
  • Melt chocolate chips and coconut oil in microwave.
  • Dip bars to coat in chocolate. Place on baking sheet lined with parchment and freeze 2 hours to set.
