Chocolate Banana Bites

Ingredients:

  • 3/4 cup Graham cracker crumbs
  • 2 tbsp melted coconut oil (split)
  • 3 bananas, sliced
  • 1/3 cup almond or nut butter
  • 1 1/2 cups semi-sweet or dark chocolate chips

Directions:

  • Line mini muffin pan with liners.
  • Combine Graham cracker crumbs and 1 tbsp coconut oil. Spread into prepared mini muffin pan.
  • Place a slice of banana on top.
  • Top each banana slice with a 1/2 tsp nut butter.
  • Place chocolate chips in medium bowl with 1 tbsp coconut oil. Microwave 30 seconds at a time until fully melted and smooth.
  • Pour chocolate in each cup until banana and nut butter are covered.
  • Freeze for at least one hour.
  • Store in freezer in large zip-lock bag.
  • Let banana bite thaw 2 minutes before eating.
