Chocolate Banana Bites

Ingredients:

  • 1/2 cup almond flour
  • 2 large bananas, sliced
  • Almond/nut butter (about 1/2 cup)
  • 1 package semi-sweet chocolate chips
  • Coconut oil
  • Shredded unsweetened coconut

Directions:

  • Mix almond flour and 1 tbsp coconut oil together until combined.
  • Press a thin layer of the cookie mixture into the bottom of each cup of a mini silicone muffin tray.
  • Place a banana slice on top of the cookie mixture in each cup.
  • Place 1/2 tsp of almond/nut butter on top of each banana slice.
  • Place in freezer for one hour.
  • Melt chocolate chips with 2 tsp coconut oil, microwaving in 30-second increments until melted and smooth.
  • Pour chocolate on top of the banana bites until each cup is filled to the top.
  • Place back in freezer for another 20-30 minutes until the chocolate is set.
  • Store banana bites in the freezer in large zip-lock bag. Thaw each bite for 2 minutes before eating.
