Chocolate Banana Bites
Ingredients:
- 1/2 cup almond flour
- 2 large bananas, sliced
- Almond/nut butter (about 1/2 cup)
- 1 package semi-sweet chocolate chips
- Coconut oil
- Shredded unsweetened coconut
Directions:
- Mix almond flour and 1 tbsp coconut oil together until combined.
- Press a thin layer of the cookie mixture into the bottom of each cup of a mini silicone muffin tray.
- Place a banana slice on top of the cookie mixture in each cup.
- Place 1/2 tsp of almond/nut butter on top of each banana slice.
- Place in freezer for one hour.
- Melt chocolate chips with 2 tsp coconut oil, microwaving in 30-second increments until melted and smooth.
- Pour chocolate on top of the banana bites until each cup is filled to the top.
- Place back in freezer for another 20-30 minutes until the chocolate is set.
- Store banana bites in the freezer in large zip-lock bag. Thaw each bite for 2 minutes before eating.
