This simple, nourishing breakfast pairs a fluffy spinach omelette with a warm bowl of oatmeal topped with fresh strawberries. Designed with the plate-it method in mind, it provides the perfect balance of protein, carbs, and veggies to start your morning on the right note.

Ingredients:

  • 2 eggs
  • 1/2 cup fresh spinach
  • 1/4 cup oatmeal
  • 1/2 tsp pure maple syrup (optional)
  • 1/8 tsp vanilla extract (optional)
  • 4-5 strawberries, sliced

Directions:

  • Crack the eggs into a bowl, whisk until smooth, and season with a pinch of salt if desired.
  • Heat a non-stick pan over medium heat, spray lightly with cooking oil, and sauté the spinach for 1-2 minutes until wilted. Pour the whisked eggs into the pan and cook undisturbed until the edges begin to set. Carefully fold the omelette in half and cook for another minute or until fully set.
  • In a small pot, bring 1/2 cup water (or milk of choice) to a boil. Stir in the oatmeal and cook for 3-5 minutes, stirring occasionally, until thick and creamy. Remove from heat and stir in maple syrup and vanilla extract if using.
  • Serve the spinach omelette on one side of the plate. Add the oatmeal on the other side and top with sliced strawberries.
