Fresh Basil Pesto

Ingredients:

  • 2 cups fresh basil leaves, packed (can sub half the basil with baby spinach)
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 1/3 cup pine nuts
  • 3 cloves garlic, minced (about 1 tbsp)
  • 1/4 tsp salt
  • 1/8 tsp freshly ground black pepper

Directions:

  1. Pulse basil and pine nuts in a blender.
  2. Add garlic and cheese and pulse several times more.
  3. Scrape down the sides of the blender.
  4. While running, slowly pour in olive oil.
  5. Season with salt and pepper.
