This hearty and flavourful Turkey and Veggie Chili is packed with lean protein, fibre-rich vegetables, and bold spices for a comforting yet healthy meal. Made with ground turkey, bell peppers, carrots, celery, and tomatoes, this chili is nutrient-dense, easy to prepare, and perfect for meal prep.
Ingredients:
- 1 lb ground turkey
- 3 bell peppers, diced
- 2 large carrots, peeled and diced
- 2 stalks celery, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tbsp extra virgin olive oil
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes with juices
- 1 tbsp garlic powder
- 3 tbsp chili powder
- 1 tbsp paprika
- 1 tsp salt
- ½ tsp black pepper
- Chopped parsley for garnish
- Shredded cheese for garnish (optional)
Directions:
- Cook the Turkey: Heat olive oil in a large pot over medium heat. Add ground turkey and cook until browned, breaking it apart as it cooks.
- Sauté the Vegetables: Add onion, garlic, bell peppers, carrots, and celery to the pot. Sauté for 10 minutes, stirring occasionally, until vegetables soften.
- Season the Chili: Stir in garlic powder, chili powder, paprika, salt, and black pepper. Cook for 1 more minute to enhance the flavours.
- Add Tomatoes & Simmer: Pour in tomato sauce and diced tomatoes (with juices). Stir well and bring to a gentle boil.
- Simmer & Serve: Reduce heat to low and let simmer for 30–40 minutes, stirring occasionally. Taste and adjust seasonings if needed.
- Garnish & Enjoy: Serve hot, garnished with chopped parsley and shredded cheese if desired.
