Ingredients:
- 1 ½ tbsp extra virgin olive oil, divided
- 1 lb ground turkey
- 3 small sweet potatoes, peeled and chopped
- 3 bell peppers, chopped
- 1 medium onion, chopped
- 1 cup broccoli, chopped
- 1 tbsp garlic powder
- ½ tbsp oregano
- ½ tbsp paprika
- Salt and pepper, to taste
- 4 eggs
- 2 medium avocados, sliced (½ avocado per serving)
- Fresh chopped cilantro, for garnish
Directions:
- Cook the Turkey: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned, breaking it apart as it cooks. Drain any excess liquid and set aside.
- Sauté the Vegetables: In the same skillet, add sweet potatoes, onion, bell peppers, garlic powder, oregano, paprika, salt, and pepper. Stir to combine. Add 2 tbsp water, cover, and cook for 12–15 minutes, stirring occasionally.
- Add Broccoli and Turkey: Stir in broccoli and return the cooked turkey to the skillet. Continue cooking for 5 more minutes until all veggies are tender.
- Cook the Eggs: In a separate pan, heat the remaining ½ tbsp olive oil over medium heat. Cook eggs to your preferred style (over-easy, scrambled, or poached).
- Assemble and Serve: Divide the turkey scramble into four servings. Top each with a cooked egg, sliced avocado, and fresh cilantro. Serve warm.
