This easy and nutritious dish features tender shrimp sautéed in garlic butter, with zucchini and mushrooms for a veggie-packed base, all served over fluffy brown rice. It’s a balanced and satisfying meal loaded with protein, fibre, and healthy fats.

Ingredients (Serves 2):

  • 6 oz shrimp (peeled and deveined)
  • 2 tbsp garlic butter (1 tbsp per serving)
  • 1 cup mushrooms, sliced (1/2 cup per serving)
  • 1 cup zucchini, sliced (1/2 cup per serving)
  • 1 cup cooked brown rice (1/2 cup per serving)
  • Salt and pepper, to taste
  • 1/2 tsp garlic powder

Directions:

  1. Cook the brown rice according to package instructions. Set aside.
  2. In a large skillet, melt 1 tbsp garlic butter over medium heat. Add the shrimp, season with salt, pepper, and garlic powder, and sauté for 2-3 minutes per side until pink and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, melt the remaining 1 tbsp garlic butter. Add the mushrooms and zucchini, and sauté for 5-7 minutes until soft and lightly browned. Season with salt and pepper to taste.
  4. Divide the cooked brown rice between two plates. Top with the sautéed vegetables and shrimp.
