Protein Twix Bites
Ingredients:
Base:
- 1 cup almond flour
- 1 scoop (30g) vegan protein powder
- 1 tbsp pure maple syrup
- 2.5 tbsp coconut oil, melted
- 1 tsp pure vanilla extract
- Pinch of salt
Caramel Layer:
- 1/3 cup almond butter
- 3 tbsp pure maple syrup
- 1 tbsp coconut oil, melted
- 1 tsp pure vanilla extract
- Pinch of salt
Chocolate Layer:
- 1 1/2 cups chocolate chips
- 1 tsp coconut oil
Directions:
- Preheat oven to 350 F. Spray mini muffin pan with oil.
- Mix base ingredients together in medium bowl using a fork. Divide evenly into muffin pan, filling about 1/3 full.
- Press down gently so there is a flat top. Bake 10 mins or until golden brown.
- For caramel layer, mix all caramel ingredients together in small bowl until smooth. Once base layer has cooled, dollop caramel and flatten tops with a small spoon.
- For chocolate layer, melt chocolate chips and coconut oil. Pour chocolate on top of caramel layer and fill to the top.
- Freeze 2 hours to set.
