Protein Twix Bites

Ingredients:

Base:

  • 1 cup almond flour
  • 1 scoop (30g) vegan protein powder
  • 1 tbsp pure maple syrup
  • 2.5 tbsp coconut oil, melted
  • 1 tsp pure vanilla extract
  • Pinch of salt

Caramel Layer:

  • 1/3 cup almond butter
  • 3 tbsp pure maple syrup
  • 1 tbsp coconut oil, melted
  • 1 tsp pure vanilla extract
  • Pinch of salt

Chocolate Layer:

  • 1 1/2 cups chocolate chips
  • 1 tsp coconut oil

Directions:

  • Preheat oven to 350 F. Spray mini muffin pan with oil.
  • Mix base ingredients together in medium bowl using a fork. Divide evenly into muffin pan, filling about 1/3 full.
  • Press down gently so there is a flat top. Bake 10 mins or until golden brown.
  • For caramel layer, mix all caramel ingredients together in small bowl until smooth. Once base layer has cooled, dollop caramel and flatten tops with a small spoon.
  • For chocolate layer, melt chocolate chips and coconut oil. Pour chocolate on top of caramel layer and fill to the top.
  • Freeze 2 hours to set.
