No-Bake Carrot Cake Bites

Ingredients:

  • 1 cup rolled oats
  • 12 pitted medjool dates
  • 1/2 cup grated carrots
  • 1 tsp vanilla
  • 1 tbsp pure maple syrup
  • 1 tsp cinnamon
  • Shredded unsweetened coconut for rolling

Directions:

  • Soak dates in warm water for 5 minutes.
  • Drain and add to food processor or powerful blender along with the rest of the ingredients (except coconut).
  • Blend until it becomes dough
  • Form into tbsp sized balls.
  • Roll in shredded coconut.
