Mexican Stuffed Peppers

Ingredients:

  • 4 large red bell peppers
  • 1 lb ground turkey
  • 2 cups cooked whole grain brown rice
  • 1/2 cup frozen corn
  • 1 large onion, chopped
  • 1 can (10oz) canned black beans, drained and rinsed
  • 1 cup salsa
  • 2 tbsp taco seasoning
  • 2 cups Mexican cheese
  • 1/4 cup green onion, chopped
  • Cilantro for garnish

Directions:

  1. Preheat oven to 350° F.
  2. Thaw corn and rinse black beans.
  3. Heat olive oil in a skillet and brown ground turkey.
  4. Add browned ground turkey to a bowl with cooked rice, onion, beans, corn, taco seasoning, 1 cup of cheese, and salsa. Mix to combine.
  5. Cut bell peppers in halves and remove seeds.
  6. Stuff each half of the bell pepper with the mixture.
  7. Bake for about 30 minutes, remove from oven and sprinkle the remaining cheese on top.
  8. Bake for another 15 minutes.
  9. Serve hot and garnish with green onion, cilantro, or both.
