This comforting slow-cooked beef stew combines tender stewing beef, red potatoes, and carrots in a rich, flavourful sauce. Perfect for chilly days, it’s easy to prepare and packed with hearty ingredients.
Ingredients (Serves 6):
- 1/2 cup BBQ sauce
- 1/2 cup water
- 1 packet onion soup mix
- 2 lbs stewing beef (32 oz)
- 1 lb red potatoes, chopped (~2 cups)
- 4-5 large carrots, peeled and sliced (~2.5 cups)
- 1 large onion, thickly sliced
- Fresh parsley, chopped (for garnish)
Directions:
- In a small bowl, mix the BBQ sauce, water, and onion soup mix. Set aside.
- Heat a skillet over medium-high heat. Brown the stewing beef on all sides and set aside.
- Place the potatoes, carrots, and onion in the bottom of the slow cooker. Add the browned beef on top.
- Pour the sauce mixture over the beef and vegetables.
- Cover and cook on low for 8-9 hours or high for 5-6 hours.
- Serve hot, garnished with fresh parsley.
