This comforting slow-cooked beef stew combines tender stewing beef, red potatoes, and carrots in a rich, flavourful sauce. Perfect for chilly days, it’s easy to prepare and packed with hearty ingredients.

Ingredients (Serves 6):

  • 1/2 cup BBQ sauce
  • 1/2 cup water
  • 1 packet onion soup mix
  • 2 lbs stewing beef (32 oz)
  • 1 lb red potatoes, chopped (~2 cups)
  • 4-5 large carrots, peeled and sliced (~2.5 cups)
  • 1 large onion, thickly sliced
  • Fresh parsley, chopped (for garnish)

Directions:

  1. In a small bowl, mix the BBQ sauce, water, and onion soup mix. Set aside.
  2. Heat a skillet over medium-high heat. Brown the stewing beef on all sides and set aside.
  3. Place the potatoes, carrots, and onion in the bottom of the slow cooker. Add the browned beef on top.
  4. Pour the sauce mixture over the beef and vegetables.
  5. Cover and cook on low for 8-9 hours or high for 5-6 hours.
  6. Serve hot, garnished with fresh parsley.
