Healthy Chocolate Cake
Ingredients:
Cake:
- 3/4 cup mashed sweet potato
- 1/4 cup coconut sugar
- 1/4 cup pure maple syrup
- 1/4 cup cocoa powder
- 1/2 cup lite coconut milk
- 1 cup gluten-free baking flour
- 1 tsp pure vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tbsp rice vinegar
Frosting:
- 1 cup mashed sweet potato
- 1/2 cup cocoa powder
- 1/2 cup pure maple syrup
- Pinch of salt
- 2 tbsp almond dark chocolate milk
Directions:
- To make sweet potato, peel 2 to 3 medium sweet potatoes and cut into 1″ cubes. Place in saucepan with water and being to boil, cooking until soft. Drain and cool. Mash with a fork until smooth.
- Add all ingredients to powerful blender in order listed. (This is important). Blend until smooth, scraping down sides as needed.
- Pour into loaf pan lined with parchment paper and bake in oven at 350 F for 30 minutes or until cooked through. Cool before frosting.
- To make frosting, combine ingredients in large bowl and mix with electric mixer until blended and smooth.
- Frost cake, slice, and enjoy!
