This vibrant and nutritious stir-fry combines lean chicken breast with a colourful mix of vegetables, topped with a hint of BBQ sauce for a flavourful twist. Served over brown rice and garnished with green onions, it’s a perfect meal for lunch or dinner.

Ingredients:

  • 6 oz chicken breast (3 oz per serving)
  • 1/4 cup onion, sliced
  • 1/2 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1/2 cup snow peas
  • 2 tbsp BBQ sauce (1 tbsp per serving)
  • 1 cup cooked brown rice (1/2 cup per serving)
  • 2 tbsp green onion, sliced (1 tbsp per serving, for garnish)
  • Salt, pepper, and garlic powder to taste

Directions:

  1. Season the chicken breast with salt, pepper, and garlic powder. In a large skillet, heat a little oil over medium heat and cook the chicken for 4-5 minutes per side, until browned and cooked through. Remove from the pan and set aside.
  2. In the same skillet, sauté the onions, peppers, broccoli, and snow peas for 5-7 minutes, until tender-crisp.
  3. Slice the cooked chicken and return it to the skillet. Add the BBQ sauce and stir until the chicken and veggies are well coated.
  4. Divide the cooked brown rice between two plates. Top with the stir-fry mixture.
