Cauliflower Nachos

Ingredients:

  • 1 head cauliflower, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tomato, diced
  • 1 medium onion, diced
  • 1 cup grated cheddar cheese
  • Olive oil spray
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp chili powder
  • 2 tsp paprika
  • 2 tsp oregano
  • Salt and pepper, to taste
  • Green onion for garnish

Directions:

  • Preheat oven to 400° F.
  • Place diced cauliflower, peppers, and onion on baking tray lined with parchment paper.
  • Spray lightly with olive oil.
  • Season with garlic powder, onion powder, chili powder, paprika, oregano, salt, and pepper; toss to coat veggies.
  • Bake in oven for 18 to 20 minutes, until veggies are tender.
  • Top with cheese and place back into the oven for 3 to 5 minutes, until cheese is melted.
  • Garnish with green onion and diced tomato.
