Cauliflower Nachos
Ingredients:
- 1 head cauliflower, chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 tomato, diced
- 1 medium onion, diced
- 1 cup grated cheddar cheese
- Olive oil spray
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp chili powder
- 2 tsp paprika
- 2 tsp oregano
- Salt and pepper, to taste
- Green onion for garnish
Directions:
- Preheat oven to 400° F.
- Place diced cauliflower, peppers, and onion on baking tray lined with parchment paper.
- Spray lightly with olive oil.
- Season with garlic powder, onion powder, chili powder, paprika, oregano, salt, and pepper; toss to coat veggies.
- Bake in oven for 18 to 20 minutes, until veggies are tender.
- Top with cheese and place back into the oven for 3 to 5 minutes, until cheese is melted.
- Garnish with green onion and diced tomato.
