This flavour-packed beef stir-fry combines tender steak strips with a vibrant mix of sautéed vegetables. Served over brown rice and topped with a hint of BBQ sauce, this dish is both nutritious and satisfying, making it perfect for lunch or dinner.

Ingredients (Serves 2):

  • 6 oz stir-fry steak strips (3 oz per serving)
  • 1 cup cooked brown rice (1/2 cup per serving)
  • 1/2 cup carrots, sliced
  • 1/2 cup snow peas
  • 1/2 cup bell peppers, sliced
  • 1/4 cup onion, sliced
  • 1/2 cup mushrooms, sliced
  • 2 tbsp BBQ sauce
  • 2 tbsp green onion, sliced (for garnish)
  • Salt, pepper, and garlic powder to taste

Directions:

  1. Cook the brown rice according to package instructions. Set aside.
  2. In a large skillet or wok, heat a bit of oil over medium-high heat. Season the steak strips with salt, pepper, and garlic powder, and stir-fry for 3-4 minutes until browned. Remove from the pan and set aside.
  3. In the same pan, sauté the carrots, snow peas, bell peppers, onions, and mushrooms for 5-7 minutes until tender. Season with salt and pepper to taste.
  4. Return the steak to the pan and add the BBQ sauce. Stir to combine and heat through for 1-2 minutes.
  5. Serve the stir-fry over a bed of brown rice, and garnish with green onions.
