Ingredients:

  • 2 salmon fillets (6 oz each)
  • 2 tsp olive oil, divided
  • 2 cloves garlic, minced
  • 2 cups fresh spinach
  • 2 medium carrots, sliced for roasting
  • 2 tbsp lemon juice

Directions:
