This Air-Fried Salmon with Sautéed Spinach and Roasted Carrots is a simple, nutritious, and flavourful meal. The salmon is crispy on the outside and flaky inside, paired with tender garlic-sautéed spinach and naturally sweet roasted carrots for a well-balanced dish.
Ingredients:
- 2 salmon fillets (6 oz each)
- 2 tsp olive oil, divided
- 2 cloves garlic, minced
- 2 cups fresh spinach
- 2 medium carrots, sliced for roasting
- 2 tbsp lemon juice
- Salt and pepper, to taste
Directions:
- Roast the Carrots: Preheat the oven to 400°F (200°C). Toss sliced carrots with 1 tsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes, flipping halfway, until tender and slightly caramelized.
- Air-Fry the Salmon: While the carrots are roasting, preheat the air fryer to 400°F (200°C). Pat the salmon dry, drizzle with 1 tsp olive oil, and season with salt and pepper. Place in the air fryer basket and cook for 8–10 minutes until the salmon is flaky and cooked through.
- Sauté the Spinach: Heat a pan over medium heat and add the minced garlic. Sauté for 30 seconds, then add spinach and cook for 1–2 minutes until wilted. Season with salt and pepper.
- Assemble and Serve: Plate the air-fried salmon alongside the sautéed spinach and roasted carrots. Drizzle with lemon juice and enjoy warm.
