These Turkey and Veggie Stuffed Peppers are packed with lean ground turkey, fresh vegetables, and bold spices for a healthy, low-carb meal. No beans, rice, or corn—just clean, simple ingredients that bring all the flavour without the extra carbs.
Ingredients:
- 8 oz ground turkey
- 2 large bell peppers, halved and hollowed
- ¼ cup onion, diced
- ½ cup zucchini, diced
- ½ cup tomato, diced
- 1 tsp olive oil (for cooking)
- 2 cloves garlic, minced
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp paprika
- Salt and black pepper, to taste
Directions:
- Preheat Oven: Preheat oven to 375°F (190°C). Lightly grease a baking dish and place bell pepper halves inside.
- Cook the Filling: Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté for 2 minutes. Add ground turkey, breaking it apart as it cooks. Stir in zucchini, tomatoes, chili powder, cumin, paprika, salt, and pepper. Cook for another 5 minutes until turkey is fully cooked and veggies are tender.
- Stuff the Peppers: Spoon the turkey mixture evenly into each bell pepper half. Cover with foil and bake for 20 minutes.
