Ingredients:

  • 6 oz steak (3 oz per serving)
  • 2 cups sweet potato wedges (1 cup per serving)
  • 2 cups broccoli florets (1 cup per serving)
  • 2 tbsp olive oil (1 tbsp per serving)
  • 1 tsp garlic powder
  • 1/2 tsp oregano
  • Salt and pepper, to taste

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potato wedges with 1 tbsp olive oil, garlic powder, oregano, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, flipping halfway through, until golden and tender.
  3. While the sweet potatoes are roasting, season the steak with salt and pepper. Heat the remaining 1 tbsp olive oil in a grill pan or skillet over medium-high heat.
