Ingredients:
- 6 oz steak (3 oz per serving)
- 2 cups sweet potato wedges (1 cup per serving)
- 2 cups broccoli florets (1 cup per serving)
- 2 tbsp olive oil (1 tbsp per serving)
- 1 tsp garlic powder
- 1/2 tsp oregano
- Salt and pepper, to taste
Directions:
- Preheat the oven to 400°F (200°C).
- Toss the sweet potato wedges with 1 tbsp olive oil, garlic powder, oregano, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, flipping halfway through, until golden and tender.
- While the sweet potatoes are roasting, season the steak with salt and pepper. Heat the remaining 1 tbsp olive oil in a grill pan or skillet over medium-high heat. Cook the steak for 3-4 minutes per side, or until it reaches your desired level of doneness. Let it rest for 5 minutes before slicing.
- In the same pan, sauté or steam the broccoli for 3-4 minutes until tender.
