This vibrant and nutritious stir-fry combines lean chicken breast with a colourful mix of vegetables, topped with a hint of BBQ sauce for a flavourful twist. Served over brown rice and garnished with green onions, it’s a perfect meal for lunch or dinner.
Ingredients:
- 6 oz chicken breast (3 oz per serving)
- 1/4 cup onion, sliced
- 1/2 cup bell peppers, sliced
- 1 cup broccoli florets
- 1/2 cup snow peas
- 2 tbsp BBQ sauce (1 tbsp per serving)
- 1 cup cooked brown rice (1/2 cup per serving)
- 2 tbsp green onion, sliced (1 tbsp per serving, for garnish)
- Salt, pepper, and garlic powder to taste
Directions:
- Season the chicken breast with salt, pepper, and garlic powder. In a large skillet, heat a little oil over medium heat and cook the chicken for 4-5 minutes per side, until browned and cooked through. Remove from the pan and set aside.
- In the same skillet, sauté the onions, peppers, broccoli, and snow peas for 5-7 minutes, until tender-crisp.
- Slice the cooked chicken and return it to the skillet. Add the BBQ sauce and stir until the chicken and veggies are well coated.
- Divide the cooked brown rice between two plates. Top with the stir-fry mixture.
- Garnish with sliced green onion and serve.
