Ingredients (Serves 2):
- 6 oz shrimp (peeled and deveined)
- 2 tbsp garlic butter (1 tbsp per serving)
- 1 cup mushrooms, sliced (1/2 cup per serving)
- 1 cup zucchini, sliced (1/2 cup per serving)
- 1 cup cooked brown rice (1/2 cup per serving)
- Salt and pepper, to taste
- 1/2 tsp garlic powder
Directions:
- Cook the brown rice according to package instructions. Set aside.
- In a large skillet, melt 1 tbsp garlic butter over medium heat. Add the shrimp, season with salt, pepper, and garlic powder, and sauté for 2-3 minutes per side until pink and cooked through. Remove from the skillet and set aside.
- In the same skillet, melt the remaining 1 tbsp garlic butter. Add the mushrooms and zucchini, and sauté for 5-7 minutes until soft and lightly browned. Season with salt and pepper to taste.
- Divide the cooked brown rice between two plates. Top with the sautéed vegetables and shrimp.
