Almond Date Delight Bites
Ingredients:
Base:
- 1 cup almond flour
- 1 scoop (30g) vegan vanilla protein powder
- 3 tbsp pure maple syrup
- 2.5 tbsp coconut oil, melted
- 1 tsp pure vanilla extract
- Pinch of salt
- Caramel Layer:
- 1 heaping cup pitted dates
Top Layer:
- 1 cup cream cheese chips
- 1 tsp coconut oil
Directions:
- Preheat oven to 350 F. Spray mini muffin pan.
- Mix base ingredients together in large bowl using a fork. Divide mixture evenly into muffin pan, pressing down gently so there are flat tops. Bake 10 mins or until golden brown.
- Caramel layer: Soak dates in warm water for 10 mins. Drain, reserving date water.
- Blitz dates with 1/4-1/2 cup reserved water in food processor until creamy and smooth.
- Once bottom layer is cooled slightly, spoon date filling into each cup spreading evenly.
- Melt cream cheese chips and coconut oil until melted. Pour on top of date filling to fill cups.
- Freeze 2 hours or until set.
