Ingredients

  • 1 turkey kolbassa, sliced and cut into halves
  • 1 cup cooked whole grain brown rice
  • 1 large onion, chopped
  • 3 bell peppers, chopped
  • 2 tsp garlic powder
  • 1 tbsp extra-virgin olive oil
  • Freshly ground black pepper, to taste
  • Green onion for garnish

Directions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add turkey kolbassa and cook for about 5 minutes, until lightly browned.
  3. Add veggies and season with garlic powder and black pepper. Continue cooking until veggies are tender and soft, about 10 minutes.
  4. Serve over rice.
  5. Garnish with green onion.
