Turkey Kolbassa Stir-fry
Ingredients
- 1 turkey kolbassa, sliced and cut into halves
- 1 cup cooked whole grain brown rice
- 1 large onion, chopped
- 3 bell peppers, chopped
- 2 tsp garlic powder
- 1 tbsp extra-virgin olive oil
- Freshly ground black pepper, to taste
- Green onion for garnish
Directions
- Heat olive oil in a skillet over medium-high heat.
- Add turkey kolbassa and cook for about 5 minutes, until lightly browned.
- Add veggies and season with garlic powder and black pepper. Continue cooking until veggies are tender and soft, about 10 minutes.
- Serve over rice.
- Garnish with green onion.
